My Recipe Box


These are free recipes that I have found online, tried out and absolutely love.  I usually don't follow recipes exactly, so I'll add any changes I've made so you can reproduce what I've made.

Appetizers

Indian Baked Chicken Pockets - Great recipe, there seemed to be way too much rice and not enough flavor, so I cut the rice in half and added double or triple the curry powder to make them fit our tastes.  12/31/10 Blog Post

Main Dishes

Chicken Lo Mein - Great recipe and pretty easy.  Next time I plan to add more veggies though!

Chipotle BBQ Burgers with Slaw - I totally love this recipe.  My husband kicks all manner of butt on the grill, although you can just cook them in a frying pan if you don't have one.

Chipotle Tamale Pie - Parents and husband approved! Prepared recipe with chives instead of cilantro as my family hates the stuff.

Pan-Seared Chicken with Artichokes and Pasta - Total yumminess!  4/28/09 Blog Post

Smokey Turkey Shepherds Pie - A nice twist on the classic recipe.  This one features a creamy sauce and smoky flavors. I left the peas out as I generally don't like them, but you cold replace them with corn. 4/25/2011 Blog Post

Sweet Corn and Lobster Pizzas - I had this amazing pizza one night at a bachelorette party and just had to make it at home.  6/8/09 Blog Post

Cherry Tomato Compote - A recipe I came up with when I had a ton of cherry tomatoes on my hands one summer.  8/23/10 Blog Post

Side Dishes

American Macaroni Salad - I use this salad for picnics and it is very easy to mass produce.  I do not add the tomato as is calls for but instead bell peppers of various colors for more crunch.

Balsamic Marinated Grilled Veggies - Recipe I made up for getting some healthy food in with all the grilled meat we love to eat.  Easy and quick!  3/26/2011 Blog Post


Caramelized Brussels Sprouts with Cranberries and Bacon - I saw this recipe on Food Network's Worst Cooks in America season 2.  Don't let the show name ruin the recipe for you.  It was excellent!  The only change I made was to use craisins instead of cranberries since they are sweeter and easier for me to find. 2/16/11 Blog Post

Chipotle Cheddar Mashed Potatoes - I made these for my husband's birthday party to go with the pork shoulder he grilled.  They turned out to be very flavorful, just watch out that you cut the chipotles up very finely or someone could get a surprise.

Crispy Smashers - This is a substitute recipe for one I made with my vegetarian partner in crime, DarthCoco.  She found the original recipe in a magazine, but this online recipe seems pretty much the same so I wanted to share it.  1/8/2011 Blog Post

Egg, Lemon, and Rice Soup (Avgolemono Soupa) - A Greek staple!  Satisfying and refreshing all at the same time.

Desserts/Sweets

Buttermilk Spice Cake - Very yummy cake.  I <3 spice cakes so very much. 4/19/09 Blog Post

Classic Shortbread Cookies in 5 Ingredients - I made the Chai Tea variety and they were great.  Also made it with almonds and that was yum as well.  Just make sure your dough has enough water in it for it to hold together for slicing. 12/22/09 Blog Post

Chocolate Chip Cookie Dough Truffles - Made for my knitting group.  They came out quite well, but are very sweet, so don't eat too many! 3/10/2011 Blog Post

Gooey Chocolate Pudding Cake - Saw this recipe of Dessert First, a show on Food Network.  The recipe is really quick and easy.  Not to mention completely yummy!

Jello Poke Cake - We've made this cake in soo very name flavors.  It is excellent for summer parties as it is kept in the fridge and really cools you off on a hot day.  4/25/09 Blog Post

Irish Cream Brownies - In honor of St. Patrick's Day I made these guys for the FiberKnots and my office.  Really yummy and gooey.  I approve!

Lemon Honey Drop Cookies - I make these cookies every Christmas.  You can also substitute orange or lime for the zest, juice and extract to change things up. 12/22/09 Blog Post

Molasses Cookies - I like my cookies chewy and these certainly fulfill that condition.  I have made these for several years now and it is a great recipe. 12/13/09 Blog Post

Old Fashioned Chocolate Cake - This is a very rich and dense cake.  A little weird in the construction, but we really liked it. 4/19/09 Blog Post

Snickers Cookies - This is more of a variation I made on the Caramel Apple Oatmeal Cookie recipe that I linked to.  I couldn't find the dryed apple slices, so instead I added 1/2 cup of each of the following: milk chocolate chips, caramel bits and lightly salted peanuts.
